Linda Conroy was well–received last July when she taught “Wild Edibles and Fermentation” for the Herb Guild, so please join cheese maker, herbalist and whole/wild food enthusiast Linda Conroy for this exploration into the lost art of cheese making. Find out how simple it is to make cheese in your own kitchen. During this day long class we will create and sample a wide spectrum of cheese that can be cultivated at home. We will make cultured butter, feta cheese, paneer, mozzarella, several varieties of soft cheese and more!

Participants will leave understanding the basic principles of culturing dairy products and crafting cheese. You’ll also learn some cooking ideas for whey, a by product of cheese making. Students can build on this introduction to create many varieties of cheese at home. We will also discuss approaches to pressing and curing cheese in the home environment.

The workshop includes instruction, samples, cheese to take home, recipes, a cheese culture to get you started and a cheesy whole/wild food lunch.
